Match was postponed until Monday because of rain.
Seventeen-year-old Ivanovic took the first set 6-4 in 41 minutes but Schiavone moved ahead in the second as she looked to get back in the match.
Early breaks were traded in the decider before Ivanovic broke to go 4-3. And she rattled off the next two games to set up a quarter-final with Nadia Petrova.
No. 29-seeded Ivanovic, who became the third teenager to reach the quarterfinals of the Roland Garros, will next meet seventh-seeded Russian Nadia Petrova.
